Maczuga Farm Borscht!
1 large finely chopped yellow onion
¾ cup of shredded carrots
½ cup of finely chopped celery
1 cup of shredded green cabbage
2 cups of shredded beets
1.5L of beef stock.
1 500ml jar of stewed tomatoes
Fresh Dill, chopped
Salt and Pepper to taste
Sauté first five vegetables until they become soft.
Add the beef stock and simmer for approximately 30 to 45 minutes.
Stir in the stewed tomatoes, dill, salt and pepper.
Bring the soup to a boil and simmer for another 30 minutes.
I spend my summers gardening and canning. I spend my winters cooking and baking. My retirement plan is to open up a 4-season greenhouse in my backyard so that I can preserve year-round.
Gardening has become a family passion. I got my husband hooked when we lived in the city and grew vegetables from planters on our apartment balcony.
We bought our first house in the city and the first spring there, my husband built me a large raised garden bed.
A few years later we moved north of Grunthal and as soon as the ground was thawed, he tilled a garden which keeps expanding every year.
My son could barely walk and he was crawling around the garden, planting potatoes. When he was two years old he got an electric gator (kid size) for Christmas and he uses it strictly to haul our vegetables from the garden and to give the neighbourhood girls rides down the lane.
My recipe rocks because it is made with 100% passion. From seed to table, my family was involved in every step of the way. Too bad the kiddo won’t eat it.
